Lunch Today: Gluten & Dairy-Free Quesadilla

I wanted to try out my new cast iron skillet and a quesadilla sounded like a good lunch!

Luckily I had picked up my favorite tortillas during my last Whole Foods run – Engine 2’s Brown Rice Tortillas. As someone who tried to stay away from corn products finding a worthy non-flour/non-corn tortilla has been a process, but these are a great solution.

After the paleo cheese success of last week, I made another batch over the weekend so all I had to do is put some avocado oil in the cast iron and put cheese slices between the tortillas and griddle it up.

The results were yummy, and it was a nice change of pace since gluten and dairy free quesadillas don’t usually exist.
